Jairo Tabi, from North West Malekula, a student at APTC prepared a gorgeous poached chicken breast roulade with cubed pumpkin and potato and a herb puree. Jairo also works at Holiday Inn and won a magnificent professional chefs knife set to go with his Gold medal. The winner from INTV was the young Leonid Vusilai from East Ambae. Leonid prepared Chicken Kiev, a stuffed chicken breast with kumala mash and a coriander sauce. He also won a professional Chefs knife set and works part-time at Poppys on the Lagoon. Today was a great show of the up and coming chefs showing off their level of skill in deboning chicken and cooking a wide variety of chicken dishes. All the competitors should be proud of what they achieved in today’s competition that was sponsored by SKAL Vanuatu and the Professional Chefs knife sets were kindly donated by Gemini Catering, from Victoria Australia. There were a high number of Gold, Silver and Bronze medals handed out and the quality of the food produced by all the students was fantastic.
