Island Kakae dish takes top marks of the competition

For release 30th October 2013: The week long Origin Culinary Arts & Hospitality Show showcased exceptional Vanuatu cuisine. A standout would have to be the only dish to be awarded Gold medal with Distinction – a full 100/100 possible points that was awarded to Lina Singo of the Holiday Inn Resort for her superior island kakae dish of pan fried poulet. 
The Island Kakae Class competition is where local NiVanuatu Chefs have the opportunity to turn what would normally be cooked at home into a top class restaurant dish. Lina, from West Ambae said that her inspiration for her dish comes from just looking around her “There is such good local food here, we have everything we need, it’s about being creative and producing an interesting and tasty dish.” 

Lina and her fellow competitors in the Island Kakae class had a an extra incentive to do well, their dishes were being judged by International Chefs, Terina Ward, of New Zealand here in Vanuatu for her third competition as a Judge, and celebrated Chef and cookbook author Chef Robert Oliver, here for the premier screening of Real Pasifik Vanuatu television series. The judges could not find fault with Linas dish – they said her cooking, presentation and interpretation was first class. When the 28 year old was told by her Executive Chef that she had won with 100 points she didn’t believe him. Executive Chef at Holiday Inn Resort Chef James Robinson said “ Lina is a strong advocate of using local produce, we are thrilled for her in winning the Island Kakae class with Distinction. As a Chef she enjoys her work and that passion shows through in what she produces and how she designs her own recipes”. 

Lina loves to work with seafood, and consequently her dish of ‘Pan Fried Poulet topped with Mele Nangai Nut and rolled Prawns’ demonstrated that passion. Interestingly though, Lina is a Pastry Chef and her sweet passion is chocolate! “I love chocolate, I bake with it, garnish with it and make finishing sauces with it!” she said. Her mentors over the years include Chef Lambert who she use to work with at Erakor Island Resort who drilled into her that she needed to practice her dishes, something she has never forgotten. In the future she wants to specialize in just cooking with local produce, to be an Island Kakae expert, something that she will keep practicing on and designing local menus.

The Management and Culinary Team of the Holiday Inn Resort are proud of their achievements in the annual Salon Culinaire, with competitors in almost every class of the front of house Service Professional and the back of house – the Chefs. Winning across the classes a total of 3 Gold Medals; 10 Silver Medals; 4 Bronze Medals and second in the Origin Restaurant Challenge – the team was just one point off winning the Restaurant Challenge, a very, very close competition in the end.
